We begin on the YucatΓ‘n Peninsula itself. Tacos de cochinita pibil arrive piled high with pork marinated in achiote and bitter orange before being slow-roasted. Nearby, we'll try tacos de lomitos de Valladolid, a dish that traces its roots back to the meeting of Maya and Spanish culinary traditions.
Along the way, we'll pause to discover one of the most fascinating characters in Mexican history: Gonzalo Guerrero. Shipwrecked on the YucatΓ‘n coast in the sixteenth century, Guerrero abandoned his Spanish identity, integrated into Maya society and fought alongside his adopted people against the conquistadors. Often described as the father of mestizo Mexico.
Our journey across Mexico continues with Jalisco-style quesabirria, where tortillas stained red with chilli broth are griddled until crisp around melting cheese and rich braised beef. There are delicate tamales steamed green salsa, golden shrimp empanadas, and steamed chorizo tacos.
After a short bus ride through the real Playa del Carmen, we'll stop for one of Mexico's greatest flavour combinations - a chamoy sorbet, balancing sweet, sour, salty and spicy notes.
The heavyweight of the day is a beloved local institution. Part butcher's shop, part casual eatery, this neighbourhood favourite specialises in cecina de Yecapixtla. Thin slices of beef are salted, lightly cured and grilled over charcoal until smoky and savoury. Entire festivals are dedicated to this dish back in its hometown. One bite and you'll understand why.
