Our four-hour movable feast begins with a lesson in comfort food, Mexican style. First comes the gordita de chicharrΓ³n y queso Oaxaca and tackle one of central Mexico's great late-night inventions: the pambazo, a sandwich dipped in chilli sauce before being fried on the griddle.
As dusk settles over the city, we'll continue through local neighbourhoods stopping for dishes that reveal just how geographically diverse Mexican cuisine really is. There are tamales stuffed with roasted poblano peppers and cheese, smoky tacos al pastor carved straight from the spit, and perfectly grilled sirloin tacos.
There are enmoladas, tortillas bathed in rich, complex mole sauce, a dish so intricate that some versions contain more than thirty ingredients. We'll sample huitlacoche quesadillas, featuring the prized corn fungus often referred to as the "Mexican truffle" and pull up a chair for suadero, one of Mexico City's most beloved taco fillings
Finally, we'll head back, culinary speaking, to the YucatΓ‘n Peninsula itself with a panucho de pollo, the beloved Yucatecan street food of stuffed tortillas, refried beans and shredded chicken and machacado de elote which transforms sweet corn into a creamy, comforting dessert that somehow manages to taste both entirely unfamiliar and strangely nostalgic.
