JAKARTA FOOD TOUR - If Jakarta is Indonesia's engine room, then Glodok is its pantry. Long before skyscrapers reshaped the skyline, Chinese merchants were trading spices, tea, noodles and sauces through these narrow streets, creating one of Southeast Asia's oldest Chinatowns. Centuries of migration have left an indelible mark on Jakarta's table, where Hokkien techniques mingle with Javanese spices, Sundanese produce and flavours carried across an archipelago of more than 17,000 islands. There may be no better place to begin understanding Indonesian food.

Our four-hour feast of 13+ tastings never strays far from Glodok's bustling lanes. Beginning beneath the iconic Chinatown gate, we'll circle one of Jakarta's greatest eating districts, slipping between family-run eateries, tea houses, hawker carts and neighbourhood institutions that have quietly fed generations.

We start gently, the Indonesian way. In a traditional tea house, glossy green klepon burst with molten palm sugar beneath fragrant pandan rice dough, while golden onde-onde reveal warm sesame crusts giving way to sweet mung bean filling. Everything is washed down with cool jasmine tea, a reminder that Chinese tea culture has been woven into Glodok's daily life for centuries.

Then the journey across Indonesia begins. A bowl of bakmi ayam celebrates Chinese noodle-making traditions that became unmistakably Indonesian, served alongside colourful nasi campur.

West Java soon takes the spotlight. Soft cassava is generously stuffed with deeply savoury oncom, a fermented ingredient unique to Sundanese cookery. Alongside comes cireng, wonderfully crisp tapioca fritters whose chewy centres have made them one of Bandung's favourite street snacks.

Food isn't the only thing with stories to tell. We'll wander through the lively Petak Sembilan Market, where traders continue a commercial tradition stretching back hundreds of years, before pausing outside Dharma Bhakti Temple, Jakarta's oldest Chinese temple, first established in 1650.

The archipelago keeps unfolding on the plate. From Palembang in South Sumatra comes pempek, springy fish cakes served with the city's unmistakable sweet, sour and spicy cuko sauce, a dish born from centuries of Chinese influence along the Musi River. Nearby, toge bogor pairs crisp bean sprouts with bright peanut dressing, while rujak brings together tropical fruit with a thrilling balance of sweetness, chilli and shrimp paste.

There are still more islands to visit. Bakmi Belitung arrives in a deeply savoury shrimp broth from the tin-mining island of Belitung, while creamy laksa ayam carries echoes of the old maritime trade routes linking Indonesia with Malaysia, Singapore and southern China, fragrant with coconut milk and warming spices

Dessert is intentionally uncomplicated. Pillowy milk buns and crisp cempedak goreng, sweet jackfruit's richer, funkier cousin wrapped in light batter and fried until caramelised.

In just four hours, you'll taste your way from Sumatra to West Java, across the Java Sea and back again, without ever leaving the streets of Glodok.
