The rolling, dusty hills around Oaxaca city are lined with agave, the primary ingredient that makes up mezcal - a smokier cousin of tequila.
To truly get to the heart of this mysterious Mexican spirit, join our Oaxacan Mezcal tasting tour designed (and sometimes led) by one of the few certified master mezcaliers.
Throughout the day, you'll visit at least three traditional palenques (distilleries), using both copper alembics and the ancient clay pots, to learn about the art of this spirit's production from field to bottle while trying around 25 different mezcals. Your guide will help you understand the different profiles and flavours that make up this historic and much misunderstood drink.
Before you sign off the day, you'll sample a pre-Hispanic fermented drink - pulque and aguamiel - accompanied by a traditional Oaxacan lunch in a beautiful rural setting before returning back to your hotel in the late afternoon.
On this unique tour you will visit ancestral and artisanal palenqueros far from the tourist trail, illustrating the various stages of mezcal production. One of the few people to be granted master mezcalier status has designed and sometimes leads the small-group tour.
If you're looking for a deeper understanding of agave distillates and the culture of the makers and their families, there's simply no better way than joining this Oaxacan mezcal educational excursion and tasting tour.
Alvin is the first Canadian to be certified as a Master Mezcalier by the Asociación Pro-Cultura de Mezcal, A.C. In 2004, he became a permanent resident of Oaxaca. Over the years, his has built up relationships with many of the artisan mezcal producers and authored over 40 articles and a book on the subject. There's simply no one better qualified to design this tour.
Randall has been passionate about mezcal for years. He's been the owner of nine Austin bars and restaurants, many of which focused on mezcal-based cocktails. Randall regularly explores the central valleys of Oaxaca and beyond, continually seeking out artisanal, family owned mezcal palenques.
